"ma-CHAYN-go" "MASH-an-go" "ma-KON-go" — However you say it, Manchego 1605 is one of the world’s greats. Fiercely name-protected, Manchego must be made from the Manchega breed of sheep in the La Mancha region of Spain (yes, like the Man of La Mancha, Don Quixote). There are very few producers still making Manchego in the traditional way... and this is one! Manchego 1605 is raw sheep’s milk, DOP approved, and WOMAN-MADE.
