Background: Les Brebis is a small, family owned winery specializing in Pinot Noir from Oregon's Eola-Amity Hills. Their wines are fermented with native or "wild" yeast and the resulting wines are both textured and elegant, expressing the unique place where the grapes were grown.

About the Wine: Many rosés are made from saignée, a by-product of red wine production. Les Brebis is made from grapes grown specifically for rosé, sourced from the same sustainably farmed vineyards that grow Pinot noir for their red wines.  After a few hours of skin contact it is pressed and fermented in stainless steel, then aged for several months in in neutral French oak barrels. 

Tasting Notes: This is a crisp, structured, spicy wine with plenty of fruit, especially Bing cherries, raspberries and stone fruit.  Thanks to a pleasant acidity it pairs well with a variety of foods—try it with soft goat cheese.
