When to Serve
It
This is an ideal outdoor salad because it will
travel beautifully and can be at room temperature for a while. Serve
this alongside grilled chicken or fish.
About the Cheese
What
is Queso de
Mano? Queso de Mano is a true
American original. Produced by tiny Haystack Mountain Goat Dairy in
Colorado, this is a cheese that embodies all of the amazing
qualities of raw goat's milk. It is smooth, creamy, rich, and tangy.
Since it's aged a bit longer (about four months) its "goatiness" has
mellowed considerably. So, you get all the health benefits of a raw
goat cheese with a flavor everyone will love.
