Greetings, Cheese Lovers!

Summer is just chugging along! Remember to take pride in our great cheese-producing region by trying out some of our newest mid-Atlantic cheeses. Maryland, Virginia, Pennsylvania... the list goes on and on. These are American artisans at their best!

Italian Wine Tasting Saturday 4-7 pm
We have some fantastic new Italian wines in stock and we can't wait for you to taste them! Stop by on Saturday from 4 till 7pm to meet one of our wonderful small importers and taste three outstanding specimins. Of course, delicious Italian cheeses will also be offered.

Also, don't forget about our bi-weekly wine & cheese tastings every other Friday night from 5-7pm. The next one will be next Friday, July 20th!

No New Cheese Class this Month
Since "Stinky Cheese Redux" was so popular, we are carrying it through July. So, watch for a new topic next month!

Queso de Mano Fruit Tumble
I am just so excited about this flavor combination that I can't think of any other way to describe it.
Rich, firm cheese, tart cherries, and sweet walnut honey. It's a yummy tumble of flavors!
 

When to Serve It

This is an ideal outdoor salad because it will travel beautifully and can be at room temperature for a while. Serve this alongside grilled chicken or fish.

What is Queso de Mano?
Queso de Mano is a true American original. Produced by tiny Haystack Mountain Goat Dairy in Colorado, this is a cheese that embodies all of the amazing qualities of raw goat's milk. It is smooth, creamy, rich, and tangy. Since it's aged a bit longer (about four months) its "goatiness" has mellowed considerably. So, you get all the health benefits of a raw goat cheese with a flavor everyone will love.

Ingredients (Serves Four)

8 ounces Queso de Mano
1 ripe pear
8 ounces fresh cherries
1/4 cup Pascal Verriere Walnut Honey (see Featured Product below)

Directions

1) Cut the Queso de Mano into 1/4 inch cubes (removing rind)
2) Cut the cherries in half and remove the pits.
3) Cut the pear into 1/4 inch cubes.
4) Tumble all all ingredients, including the Walnut Honey, into a bowl.
5) Stir until fruit and cheese are coated lightly in honey.

This artisan honey is collected from Pascal Verriere's honeybee hives in the Pyrenees of France. Chopped walnuts give this already-rich honey and amazing texture and flavor.
It is wonderful on cheese or warm toast in the morning. Add some mascarpone before the honey and really jazz up your morning!
